The best part? No oven, no stress, and absolutely no waiting around! Just melt down some silky chocolate with butter and syrup, stir in a bold splash of espresso, and toss in your favourite crunchy cereal. A quick swirl into a nest shape, a short chill in the fridge, and you’re done.

Ingredients

  •  225–250g dark or milk chocolate, broken into pieces
  • 50g butter (or vegan spread)
  • 2 tbsp golden syrup (or corn syrup)
  • 30ml strong espresso
  • 75–100g cereal for crunch: shredded wheat (crushed), cornflakes, or Rice Krispies
  • 36 mini chocolate eggs (about 3 per nest), to decorate
  • Optional: pinch of sea salt (great with dark chocolate)

 

Method

  1. Prep the tin: Line a 12-hole muffin or fairy cake tin with paper cases.
  2. Melt the base: In a heatproof bowl over a pan of gently simmering water (bowl not touching water), melt the chocolate + butter + golden syrup, stirring until glossy and smooth. (Microwave option: 20–30 second bursts, stirring each time.)
  3. Add the coffee: Take off the heat and stir in your espresso until fully combined.
  4. Coat the crunch: Add your cereal and fold gently until every piece is coated in chocolate.
  5. Shape the nests: Spoon the mixture into the cases. Use the back of a teaspoon to press a small dip in the centre- this is where the eggs will sit.
  6. Decorate: Add 3 mini eggs to each nest. Chill to set: Refrigerate for at least 1 hour, or until firm.

 

Tips for perfect nests

  • Keep chocolate smooth: Let espresso cool slightly before adding. If the mixture looks grainy, stir in 1 tsp hot water and mix gently to bring it back.
  • Best crunch texture: Crushed shredded wheat gives the most “twig-like” nest look; cornflakes give a lighter bite.
  • Easier shaping: Slightly dampen the spoon before pressing the centre to stop sticking.
